What the heck is 'Ube'? It is a purple yam and this year's summer obsession! I have liked the taste of ube for years but never tried it in a truffle until now. It is popular in the Philippines and used in the culinary industry throughout the world primarily for the natural purple color it imbues in just about anything. I use the powdered form to color the Lavender & White Chocolates I make for Calyx Creek Lavender Farms. The savory taste of the ube balances well with the sweetness of the white chocolate in the ganache to produce a very unique and delicious flavor. (By the way, the color of the ganache comes ONLY from the ube!)
