Roasted Strawberry? Where did that come from from?
Well, before introducing my 'Pi' inspired chocolates for March, followers of A Chocolate Studio on Facebook and Instagram guessed what they were going to be. One guess was Roasted Strawberry. Even though that wasn't one I planned on making, I started heading down that path by first finding out what that meant and then exploring recipes. The strawberries are roasted with a sweetener (sugar, honey, etc.) and something acidic like vinegar (just a bit so it enhances the strawberry flavor). I choose maple syrup and balsamic vinegar in the roasting of the strawberries. I then pureed it and used it in a dark chocolate ganache. YUM!!
