I love watching baking and/or cooking shows while exercising, doing boring paperwork, etc... So many of the desserts feature Mango and Passionfruit so I've been thinking about this combination for sometime. Over the holiday break, I decided to make an emulsion (so I could pipe it into a mold) of a Mango Pate de Fruit and layer it with a Passionfruit and Dark Chocolate ganache. The result is the Mango Tango!
