Inspired by March, the month according to Pi (or pie)! 
 
Key limes are renowned for their bright, tart flavor, making them a delightful addition to A Chocolate Studio's list of bonbons. Their small size and intense flavor profile can be challenging to work with, as it takes a significant number to extract the necessary juice and zest.  For one batch of Key Lime ganache, the zest from 14 Key Limes was needed to infuse in the cream and the juice from 10 of them to add at the end.
