French Silk Pie is an indulgent treat in any form and now it is featured at A Chocolate Studio in a bonbon!
A French Silk pie has a meringue (basically egg whites and sugar) on the top, but that would not work with a chocolate bonbon. However a pipeable marshmallow would work wonderfully as a substitute. A marshmallow is also made with egg whites and a combination of sugars, but it is cooked, so the egg whites are cooked and some of the moisture is removed. . The ganache layer is made from a dark milk so is creamy (like the pie) and the extra cocoa balances well with the sweetness of the marshmallow.
